Garden Learning Series... Potato Chitting

Today I cut my russet potatoes that I got from the grocery store a few weeks ago. They had started to chit. So instead of going to the seed store for my potatoes, I thought I’d give the grocery store ones a try. I will be growing in the 10 or 15 gallon grow bags that I purchased from Amazon (links below). They need time to dry and form a protective covering before planting. I laid them out on the windowsill.
Any potato, with sprouting eyes, that's at least the size of a chicken egg has the means to yield up to five pounds of fresh potatoes. 
Generally speaking, the smaller varieties of potatoes grow to maturity faster but yields less harvest.
This was roughly 4-5 pounds of the grocery store potatoes I'm going to try. Let's see how it goes!
